I Want @Albert_Bartlett On My Table! Yum

We are a "Meat and Potatoes" family around here...
There is no denying that...

When I was given the opportunity to review the "Rooster Potatoes" from Albert Bartlett, I was eager to try them... I mean, Rooster Potatoes?  I have never heard of such!!!!

Oh My Goodness.
They are SO GOOD.
But here is the deal... these little spuds of love are new to the US.
You see, they are a household name in the UK (for over 60 years) and now, the lucky residents of Georgia and Colorado get to try them out... The drawback?  As with everything that deals with farming and crops... they are only harvested for a limited time... meaning that when they are no longer on the shelves at Wal-Mart, you are just out of luck...

We used them to make smashed potatoes... YUMMY...  and I also used them to make a dish my mom makes from time to time...Just chunk up the potatoes, chunk up some onions and add butter.  Then, bake in the oven!!!!

Now, Let me tell you what I want to try... Thanks to the Albert Bartlett recipe :

Instructions
  1. Preheat oven to 400°F.
  2. Sprinkle coarse sea salt onto a baking tray, place the potatoes on top and put into the oven.
  3. Bake until tender.
  4. While baking, mix the mozzarella, basil and tomatoes together with salt and pepper.
  5. Remove the potatoes from the oven, cut an “X” in the top of each potato and squeeze the potato to open it up.
  6. Place a spoonful of the tomato and mozzarella mix into each potato and serve while still hot.
