Friday Feast #1 ( #Linky ) Crock Pot Potato Soup
I am glad you decided to stop by and I really hope you join me as I try to do Friday's Feast! What exactly is Friday's Feast? It is what I hope to start as a great link up!
All you have to do is post a link to your recipe of choice! It can be an old one or a new one. It can be easy or hard. Hey, it can literally be anything... drinks, entree, snacks... the options are endless! I just hope you join up with me and maybe we can all find a few new recipes to add to our collection!
I hate to admit that I have no picture of the finished product. I plan to do better at taking photos of the dishes I cook, but until then, I will find a random photo to add to give you something to see! I saw this recipe being passed around on facebook, so I am not sure where it was originally posted . If you know where it came from, I would love to link back to it, so please let me know!
This was DELICIOUS!!! I made this at one point in December. I thought it was awesome and everyone else seemed to agree. It was great the next day too, although in our house, there wasn't much left for day number 2. The next time I make this (and it will be soon, perfect for cold weather!) I will more than likely double it so that we have enough for more than one day!
SIDE NOTE - After researching this, I found this recipe also over at Simply Made With Love. I know I have never visited this site, but I will credit it back here since it seems like it might have been where it started, before ending up on facebook.

Crock Pot Potato Soup
Ingredients:
1 30oz. bag of frozen diced hash browns
1 32 oz box of chicken broth
1 can of cream of chicken soup (10 oz)
1 pkg. cream cheese (8 oz, not fat free)
3 oz bacon bits
1 cup shredded cheddar cheese
salt and pepper to taste
Directions:
Put the potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper.
Cook on low for 8 hours or until potatoes are tender.
An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving.
Once the cream cheese is completely mixed in, it's ready to serve.
Top with cheddar cheese and some additional bacon bits.

ReplyDeleteI'll have to try this! It sounds wonderful. I've been in a soup mood since it is Jan. Although it's 45 degrees today! That's unheard of for Nebraska!

ReplyDeleteI like potato soup a lot. I'd make it this way for the guys (maybe even add some meat) and make it with water for me (veggie) or maybe milk (not vegan). :)
