Two New Recipes - #FridayFeast #RussellInsiders

Well, we made it to Friday (yay!) and that means it is Friday Feast!  If you were here yesterday, you saw my review on Russell Madness, so today I wanted to share two recipes to make it a Movie Night this weekend!  Talk about Dinner and a Movie!    (I am going to share two recipes with you this week!) 
 
 
Easy Sweet and Sour Chicken:
1 Tbsp oil
1 lb boneless skinless chicken breast, cut into bite size pieces
2 cups  frozen stir fry vegetables
1 can (8 oz) pineapple chunks in juice, undrained
1/2 cup sweet and sour sauce
1 cup water
2 cups Minute White Rice or Minute Brown Rice, uncooked
 
Directions -
HEAT oil in large skillet on medium-high heat.  Add chicken; cook and stir 4 minutes or until cooked through.  ADD vegetables, pineapple with juice and sweet and sour sauce; mix well.  Stir in water. Bring to boil. STIR in rice; cover.  Reduce heat to medium-low; simmer 5 minutes.  Remove from heat.  Let stand 5 minutes or until almost all of the liquid is absorbed and rice is tender. 
 
Family Movie Night with Beef and Rice Soft Tacos-
1 Tbsp oil
1 lb lean ground beef
1 cup water
1 cup salsa
1 pkg (1.25 oz) dry taco seasoning mix
2 cups Minute White Rice, uncooked
8 flour tortillas
1 cup cheddar cheese, shredded
 
Directions -
HEAT oil in large skillet on medium-high heat.  Add ground beef; cook and stir until lightly browned.  Stir in water, salsa and seasoning mix.  Bring to boil.  STIR in rice; cover.  Remove from heat.  Let stand 5 minutes.  Stir, SPOON ground beef mixture evenly onto tortillas; sprinkle with cheese.  Fold Tortillas in half to enclose filling.
 
Easy chicken Tacos - Omit oil.  Prepare as directed,  substituting 1 package (6 oz.) grilled chicken breast strips for the ground beef.

  1. I'd love to try the Easy Sweet and Sour Chicken. It sounds good. I'm not going to lie the monkey on the DVD looks creepy. I bet it's fun though.

  3. That is easy. I like to make easy recipes. My daughter loves sweet and sour chicken, but the s&s has to be on the side (funny, right?). The rest of the crew eats it normal. ;)
