This Baguette Looks Amazing!


We know I am not a cook...
But, I can share recipes that I get in emails :)
This is for those that are fans of TUNA.

Truth be told, I was not a TUNA fan, until a couple years ago...
Quite tasty!  
I really want to try the Baguette!!! (Minus the Olives!)

Tuna Florentine Soup
Serve with a crusty roll for a hearty lunch!

Ingredients:
1 pouch (6.4 oz.) StarKist® Albacore Tuna in Water
1 cup chopped onion
2 carrots, peeled and chopped
1 stalk celery, chopped
2 Tbsp. Extra Virgin Olive Oil
1 can (15 oz.) white beans (cannellini)
½ cup dry orzo (or other small pasta)
6 cups Low Sodium Chicken Broth
3 oz. Fresh spinach (about 2 cups)
2 Tbsp. prepared pesto

Directions:
  • Heat olive oil in large saucepan over medium heat.  Add onion, carrots and celery and cook until vegetables are soft, about 5 minutes. 
  • Mix in white beans, orzo and chicken broth and cook for 7 -8 minutes or until pasta is tender. 
  • Stir in pesto and tuna.  Add spinach and stir until just wilted.
  • Serve with parmesan cheese as desired.

Mediterranean Tuna Baguette

Ingredients:
1 large loaf French bread
1 roasted red pepper, cut into strips
1 small tomato, sliced
Red Onion slices
Sliced Black Olives, brine cured
Artichoke Hearts, quartered
10 – 12 fresh basil leaves
Directions:
  • Slice French bread lengthwise in half.  Hallow out the inside of both halves, leaving about ¾ inch along the edges.
  • Line one side of the loaf with basil leaves and spread tuna over top. 
  • Place vegetables and olives over top the tuna in layers.  Top with the other side of the bread.
  • Wrap in plastic wrap and chill for at least 2 hours.
  • Cut in large slices (2 – 3 inches) to serve.

Zucchini Boats stuffed with Albacore and Fresh Vegetables
Light and fresh, the perfect way to use your garden zucchini!

Ingredients:
2 large zucchini, sliced in half length-wise and hollowed out (insides of one, reserved)
¼ cup chopped carrots
½ red onion, chopped
1 red pepper, diced
1 can diced tomatoes with Italian seasoning, drained
½ cup cheddar cheese
Directions:
  • Preheat oven to 375°F.
  • Dice the inside of one of the zucchini and place in a medium bowl.  Add tuna, carrots, onion, pepper, and tomatoes and mix well.
  • Place hollowed out zucchini in a large baking dish.  Place ¼ of tuna and vegetable mixture in each zucchini half to stuff it.
  • Bake in preheated oven for 25 minutes.  Top with 2 Tbsp. cheese and continue baking for 10 additional minutes until cheese has melted.
